My wonderful friend Suzie passed this amazing recipe on to me and I have to say it is simply delicious! If you are looking for a quick, easy and healthy recipe you have found it!!!
This is a great salad to use as a side dish to burgers, chicken on the grill or fish. You can also make a bowl of this great salad on Sunday afternoon and take it to work with you for lunch (Like I’m doing right now). Not only does it taste amazing, but it’s light, healthy and gluten free!
So here’s the recipe:
1 can of organic black beans drained (I like spicy black beans)
1 avocado diced
1 small purple onion chopped
1 large tomato chopped
About a handful of cilantro chopped
1 medium jalapeno chopped (only if you like it spicy)
1 cup of quinoa cooked
I like to add a little salad dressing for extra flavor: Paul Newman’s Parmesan & Roasted Garlic
Mix all of the ingredients in a large bowl and enjoy!!!
