1 pound tomatillos, chopped (green tomatoes in a husk)
3-4 chipotle chilies, finely chopped (LaCostena brand in can with adobo sauce)
¼ white onion, finely chopped
2 Tablespoons cilantro, finely chopped
2 teaspoons fresh lemon juice
2 red tomatoes on the vine
1 teaspoon fresh lime juice
¼ teaspoon salt (salt to taste)
¼ teaspoon ground pepper
Combine the tomatillos, red tomatoes, chilies, onion, cilantro, juices, salt and pepper in a bowl. Mix well.
Cover and let chill in the refrigerator for a minimum of 1 hour. It is better to make this a day or two ahead of time to allow the flavors to blend completely.
